Loaded with veggies and packed with flavour, this Tuscan Chicken Pasta was recently a big hit at our Torquay centre. If you are looking for a new and easy weekday meal be sure to add this one to your list.


  • 500g chicken thighs, diced
  • 250g pasta of choice
  • 1 box of frozen spinach
  • 1 carrot
  • 1 zucchini
  • 1 tbsp of minced garlic
  • Half bunch of thyme
  • 1 tbsp tomato paste
  • 1 can diced tomatoes
  • 1 can coconut cream
  • 1 tbsp chicken stock powder
  • Salt and pepper to taste



Finely chop thyme and grate carrot and zucchini.






On high heat in a large pot, add olive oil to cover the pan. Once hot, add thyme and garlic to cook for one minute or until fragrant.




Add grated carrot and zucchini to pot and cook until soft. Once soft, add chicken stock powder and stir for 30 seconds.





Add diced chicken to pot and cook until browned.






Stir in tomato paste and canned tomato. Add salt and pepper to taste.






Bring pasta sauce to boil and add frozen spinach.
On a low heat, stir in coconut cream. Simmer for 5 minutes.






Add pasta of choice to pasta sauce and simmer until pasta is cooked. Add water if needed to cover pasta.





Rest for 10 minutes and enjoy!
